Just like the 2014 vintage, the 2015 Imperial Sotolon was conceived using ingredients that share the same dominating aromatic component as maple syrup, then aged in oak rum casks from the Guinean El Dorado house. This time, however, the aging process was better mastered, extended over a longer period and completed in casks thoroughly infused with old El Dorado dark rum.
The 2015 Sotolon thus shows off aromas of maple syrup, roasted buckwheat and fenugreek, molasses and coffee.
It pairs wonderfully with maple, curry, balsamic vinegar or soy sauce-based recipes, with dishes in which nuts, apricots, peaches, coconut, polenta, mushrooms or coffee dominate, as well as with grilled roasted meats such as pork or beef, or even lobster in sauce. Serve it in a glass, just like you would serve a great wine.
